  • 2 medium chicken breasts, cut into bite-sized pieces
  • 1 tbsp Cajun seasoning

For the Sauce and Tortellini:

  • 1 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Cajun seasoning (adjust for spice level)
  • 1/4 tsp smoked paprika (optional)
  • Salt and black pepper, to taste
  • 1 (20 oz) package refrigerated cheese tortellini

Optional Toppings:

  • Fresh parsley, chopped
  • Crushed red pepper flakes

Instructions

  1. Cook the Chicken:
    • Heat olive oil in a large skillet over medium heat. Toss the chicken pieces with Cajun seasoning.
    • Add the seasoned chicken to the skillet and cook for 4–5 minutes, or until golden and cooked through. Remove the chicken from the skillet and set aside.
  2. Make the Sauce:
    • In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant.
    • Pour in the heavy cream and chicken broth, stirring to combine.
    • Add Parmesan cheese, Cajun seasoning, smoked paprika (if using), and season with salt and pepper to taste. Let the sauce simmer for 3–4 minutes, or until slightly thickened.
  3. Cook the Tortellini:
    • Stir the tortellini into the sauce, ensuring they are fully coated. Cover the skillet and let the tortellini simmer for 4–5 minutes, stirring occasionally, until tender and heated through.
  4. Combine and Serve:
    • Add the cooked chicken back to the skillet and stir to combine. Cook for an additional 1–2 minutes to warm everything through.
    • Garnish with fresh parsley and red pepper flakes if desired. Serve immediately.

  • For extra veggies, stir in baby spinach, diced tomatoes, or sliced bell peppers.
