This creamy cauliflower soup is smooth, comforting, and full of flavor with simple ingredients. It’s a perfect healthy meal for cold days.

Ingredients

  • 1 medium head cauliflower, chopped
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 cup milk or plant-based milk
  • 1/2 cup heavy cream or coconut cream (optional for extra creaminess)
  • Salt and pepper to taste
  • Chopped chives or parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent, about 5 minutes.
  3. Stir in garlic and cook for 1 more minute.
  4. Add chopped cauliflower and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until cauliflower is tender.
  5. Remove from heat and use an immersion blender to puree until smooth (or carefully transfer to a blender in batches).
  6. Stir in milk and cream, then season with salt and pepper to taste.
  7. Simmer for another 5 minutes to heat through, then serve garnished with herbs.

Notes

  • For a vegan version, use plant-based milk and coconut cream.
  • Add a pinch of nutmeg or curry powder for a flavor twist.
  • Top with croutons or roasted chickpeas for added texture.
