Creamy Chicken and Spinach Casserole is a comforting and hearty baked dish made with tender chicken, fresh spinach, and a rich creamy sauce, all topped with melted cheese. Perfect for an easy weeknight dinner.

  • 2 cups cooked chicken, shredded or chopped
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups fresh spinach
  • 1 (10.5 oz) can cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (optional for topping)
  • Cooking spray or oil for greasing

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Heat olive oil in a skillet over medium heat. Add diced onion and garlic, sauté for 2–3 minutes until soft.
  3. Add spinach and cook until wilted, about 2 minutes. Remove from heat.
  4. In a large bowl, mix cream of chicken soup, sour cream, milk, thyme, salt, and pepper until well combined.
  5. Stir in cooked chicken, sautéed spinach mixture, and half of the mozzarella and Parmesan cheese.
  6. Spread mixture evenly into the prepared baking dish.
  7. Top with remaining mozzarella and Parmesan cheese. Sprinkle breadcrumbs on top if using.
  8. Bake for 25–30 minutes or until the casserole is hot and bubbly with a golden top.
  9. Let cool for 5 minutes before serving.

Notes

  • Use rotisserie chicken for convenience.
  • Substitute cream of mushroom or celery soup for a different flavor.
  • Add cooked rice or pasta to make it more filling.
