  • 1 cup (240 ml) heavy cream
  • 1/2 cup (120 ml) chicken broth
  • 1/2 cup (50 g) grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 3 cups fresh spinach (about 90 g)
  • 1 tablespoon lemon juice (optional, for brightness)

Instructions

1️⃣ Cook the Chicken:

  • Season chicken with salt, pepper, garlic powder, and paprika.
  • Heat olive oil in a large skillet over medium-high heat.
  • Cook the chicken for 4-5 minutes per side, until golden brown and cooked through (internal temp: 165°F / 75°C).
  • Transfer to a plate and set aside.

2️⃣ Make the Sauce:

  • In the same skillet, melt butter over medium heat.
  • Add minced garlic and sauté for 30 seconds until fragrant.
  • Pour in chicken broth, scraping the pan to deglaze.
  • Stir in heavy cream, Parmesan, Italian seasoning, and red pepper flakes (if using).
  • Let simmer for 2-3 minutes until the sauce thickens.

3️⃣ Add Spinach & Finish:

  • Stir in fresh spinach and cook until wilted (1-2 minutes).
  • Add lemon juice (if using) and adjust seasoning if needed.
  • Return the chicken to the skillet, spooning sauce over the top.
  • Simmer for 1-2 minutes to reheat the chicken.

4️⃣ Serve & Enjoy:

  • Serve hot over pasta, rice, mashed potatoes, or with crusty bread.
