This Creamy Chorizo Queso Dip is cheesy, spicy, and packed with smoky chorizo flavor! Made with melted cheese, savory chorizo, and a touch of spice, it’s the perfect appetizer for game day, parties, or anytime you’re craving a warm, gooey dip!

For the Queso:

  • ½ lb Mexican chorizo, casings removed
  • 1 tablespoon butter or olive oil (if needed for sautéing)
  • ½ onion, finely diced
  • 1 jalapeño, finely chopped (optional, for extra heat)
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika (optional, for depth of flavor)
  • 2 tablespoons flour (or cornstarch for a gluten-free version)
  • 1 cup whole milk (or half-and-half for extra creaminess)
  • 1 can (10 oz) Rotel tomatoes with green chilies, drained
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
  • ½ cup cream cheese, softened
  • ¼ cup heavy cream (optional, for extra smooth texture)

For Garnish:

  • Chopped cilantro
  • Diced tomatoes
  • Sliced jalapeños
  • Crumbled queso fresco or extra shredded cheese

For Serving:

  • Tortilla chips
  • Warm flour or corn tortillas
  • Vegetables (carrots, celery, bell peppers, etc.)

Instructions

Step 1: Cook the Chorizo

  1. Heat a large skillet over medium heat.
  2. Add chorizo and cook, breaking it apart, until browned and crispy (about 5 minutes).
  3. Remove chorizo with a slotted spoon, leaving some grease in the pan.

Step 2: Sauté the Aromatics

  1. In the same pan, sauté onion and jalapeño until soft (3 minutes).
  2. Add garlic, cumin, and smoked paprika, stirring for 30 seconds.

Step 3: Make the Queso Base

  1. Stir in flour and cook for 1 minute, until lightly golden.
  2. Slowly whisk in milk, stirring continuously to avoid lumps.
  3. Add Rotel tomatoes and bring to a gentle simmer.

Step 4: Melt the Cheese

  1. Reduce heat to low and stir in shredded cheese and cream cheese.
  2. Stir until completely melted and smooth.
  3. If too thick, add a little extra milk or heavy cream.

Step 5: Combine & Serve

  1. Stir in the cooked chorizo.
  2. Transfer to a serving dish or mini crockpot to keep warm.
  3. Garnish with cilantro, jalapeños, and diced tomatoes.
