Creamy Cucumber Salad is a cool and refreshing side dish made with crisp cucumbers, red onion, and a tangy, creamy dressing. Perfect for summer cookouts or a light accompaniment to any meal.

Ingredients

  • 2 large cucumbers, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon white vinegar or lemon juice
  • 1 teaspoon sugar
  • 1 tablespoon fresh dill, chopped (or 1 tsp dried dill)
  • Salt and pepper to taste

Instructions

  1. Place sliced cucumbers in a colander, sprinkle with a little salt, and let sit for 10–15 minutes to draw out excess moisture. Pat dry with paper towels.
  2. In a large bowl, whisk together sour cream, mayonnaise, vinegar, sugar, dill, salt, and pepper.
  3. Add cucumbers and red onion to the dressing and toss until well coated.
  4. Chill in the refrigerator for at least 30 minutes before serving to enhance the flavor.

Notes

  • Use English cucumbers or seedless cucumbers for best texture.
  • Add garlic or chives for extra flavor variation.
  • Can be made a few hours ahead and stored in the fridge.
