Ingredients

Scale
For the Chicken:
  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 1 tablespoon butter
For the Dijon Cream Sauce:

  • 2 cloves garlic, minced
  • ½ cup chicken broth
  • ½ cup heavy cream (or half-and-half for a lighter option)
  • 2 tablespoons Dijon mustard
  • 1 teaspoon whole grain mustard (optional, for texture)
  • 1 teaspoon Worcestershire sauce (optional, for depth)
  • 1 teaspoon lemon juice
  • ½ teaspoon dried thyme (or 1 teaspoon fresh thyme)
  • ¼ cup grated Parmesan cheese (optional, for extra creaminess)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Chicken:

    • Pat the chicken dry with paper towels and season with salt, pepper, garlic powder, and paprika.
  2. Sear the Chicken:

    • Heat olive oil and butter in a large skillet over medium-high heat.
    • Sear chicken for 5-6 minutes per side, until golden brown and cooked through (internal temp: 165°F/75°C).
    • Remove from pan and set aside.
  3. Make the Dijon Sauce:

    • In the same pan, sauté garlic for 30 seconds until fragrant.
    • Add chicken broth, scraping up any browned bits from the pan.
    • Stir in Dijon mustard, whole grain mustard, Worcestershire sauce, lemon juice, and thyme.
    • Simmer for 2 minutes to reduce slightly.
  4. Add Cream & Finish:

    • Reduce heat to low, stir in heavy cream and Parmesan cheese (if using), and simmer for 2 minutes until thickened.
    • Return chicken to the pan, spoon sauce over it, and let cook for 2-3 minutes.
  5. Serve & Enjoy:

    • Garnish with fresh parsley and serve with mashed potatoes, rice, or roasted vegetables!

Notes

  • For a tangier sauce, add 1 extra teaspoon of Dijon mustard.
  • Make it spicy by adding a pinch of red pepper flakes.

  • Use Greek yogurt instead of cream for a lighter version.
