  • 1 lb Italian sausage (mild or spicy), casing removed
  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes (optional)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 (20 oz) package refrigerated cheese tortellini
  • 3 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned, breaking it into crumbles. Drain excess fat if necessary.
  2. Add garlic and red pepper flakes (if using) and sauté for 1 minute until fragrant.
  3. Pour in heavy cream and chicken broth. Stir in Parmesan cheese and bring to a simmer.
  4. Add tortellini and cook uncovered for 5–7 minutes, stirring occasionally, until tender and sauce has thickened slightly.
  5. Stir in fresh spinach and cook for 1–2 more minutes until wilted.
  6. Season with salt and pepper to taste. Serve warm, topped with extra Parmesan if desired.
