This Creamy Herb Chicken & Basmati Rice is a rich, flavorful, one-pan dish featuring juicy pan-seared chicken, fragrant basmati rice, and a creamy herb sauce. It’s the perfect comfort meal for a cozy weeknight dinner!

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • 2 tablespoons olive oil

For the Rice:

  • 1 cup basmati rice, rinsed & drained
  • 2 tablespoons butter
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Creamy Herb Sauce:

  • ½ cup heavy cream (or half-and-half)
  • ½ cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • 1 teaspoon fresh thyme (or ½ teaspoon dried)
  • 1 teaspoon fresh parsley, chopped
  • 1 teaspoon lemon juice (optional, for brightness)


Instructions

Step 1: Cook the Chicken

  1. Season chicken with salt, pepper, garlic powder, onion powder, Italian seasoning, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear chicken for 4-5 minutes per side until golden brown. Remove and set aside.

Step 2: Cook the Basmati Rice

  1. In the same skillet, melt butter and sauté onions for 2-3 minutes.
  2. Add garlic and cook for 30 seconds until fragrant.
  3. Stir in rinsed basmati rice and toast for 1 minute.
  4. Pour in chicken broth, salt, and pepper. Bring to a simmer.
  5. Place chicken back on top of the rice. Cover and cook for 15 minutes on low heat.

Step 3: Make the Creamy Herb Sauce

  1. Once the rice is tender, pour in heavy cream and Parmesan cheese.
  2. Stir gently and let simmer for 2 minutes.
  3. Add Italian seasoning, thyme, parsley, and lemon juice. Mix well.

Step 4: Serve & Enjoy

  1. Garnish with extra fresh herbs and Parmesan cheese.
