A creamy, protein-rich pasta dish made with hummus as the base sauce, perfect for a quick and healthy weeknight meal.

Ingredients

  • 8 oz pasta (any type)
  • 1 cup hummus
  • 1/4 cup reserved pasta water
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup cherry tomatoes, halved
  • 2 cups baby spinach
  • Salt and black pepper to taste
  • Juice of 1/2 lemon
  • 2 tbsp chopped fresh parsley (optional)

Instructions

  1. Cook the pasta according to package instructions. Reserve 1/4 cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes (if using) and sauté for 1 minute.
  3. Add cherry tomatoes and cook until they begin to soften, about 3 minutes.
  4. Add the baby spinach and cook until wilted, about 2 minutes.
  5. Reduce heat to low and stir in hummus and reserved pasta water to create a creamy sauce.
  6. Add the cooked pasta to the skillet and toss to coat evenly with the sauce.
  7. Season with salt, pepper, and lemon juice. Mix well.
  8. Serve warm, garnished with fresh parsley if desired.

Notes

  • Use flavored hummus (e.g., roasted garlic or red pepper) for extra depth.
  • Add protein like grilled chicken or tofu for a more filling meal.
  • Leftovers can be stored in the fridge for up to 3 days.
