Creamy Jamaican Shrimp Rasta Pasta is a bold and flavorful fusion dish featuring tender shrimp, colorful bell peppers, and jerk seasoning in a creamy Parmesan sauce over pasta. A Caribbean-inspired comfort meal with a spicy kick.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp jerk seasoning
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 cloves garlic, minced
  • 1/2 cup diced onion
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 8 oz penne pasta
  • Salt and pepper to taste
  • Chopped parsley or green onions for garnish (optional)

Instructions

  1. Cook penne pasta according to package instructions. Drain and set aside.
  2. Toss shrimp with jerk seasoning until evenly coated.
  3. In a large skillet, heat olive oil over medium-high heat. Sauté shrimp for 2–3 minutes per side until just cooked. Remove and set aside.
  4. In the same skillet, add bell peppers, onion, and garlic. Sauté for 4–5 minutes until vegetables are tender.
  5. Reduce heat to medium, pour in heavy cream, and stir in Parmesan cheese. Simmer for 2–3 minutes until sauce thickens slightly.
  6. Add cooked pasta and shrimp back into the skillet. Toss to coat in the sauce. Adjust seasoning with salt and pepper.
  7. Garnish with parsley or green onions and serve hot.

Notes

  • Adjust jerk seasoning to your spice tolerance.
  • For extra richness, add a tablespoon of cream cheese to the sauce.
  • You can use chicken instead of shrimp if desired.
