For the Chicken Bites:

  • 1 pound (450 g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste

For the Pasta:

  • 300 g (10 oz) pasta (fettuccine, spaghetti, or penne)
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1 cup (240 ml) heavy cream
  • 1/2 cup (120 ml) chicken broth (or reserved pasta water)
  • 1 cup (100 g) freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste

Optional Garnishes:

  • Fresh parsley, chopped
  • Extra Parmesan cheese

Instructions

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. Prepare the Chicken Bites:
    • Season the chicken pieces with paprika, Italian seasoning, salt, and pepper.
    • Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for 2-3 minutes per side until golden brown and fully cooked.
    • Lower the heat and add 2 tablespoons of butter and the minced garlic. Cook for another 1-2 minutes, tossing the chicken in the garlic butter. Remove from the skillet and set aside.
  3. Make the Creamy Parmesan Sauce:
    • In the same skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and cook until fragrant, about 30 seconds.
    • Stir in the heavy cream and chicken broth (or pasta water). Simmer for 2-3 minutes, allowing the flavors to meld.
    • Add the Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Stir until the cheese is melted and the sauce is smooth. Season with salt and pepper to taste.
  4. Combine the Pasta and Sauce:
    • Add the cooked pasta to the sauce and toss to coat evenly. If the sauce is too thick, add a splash of reserved pasta water to loosen it.
  5. Serve:
    • Divide the creamy Parmesan pasta among plates and top with the garlic butter chicken bites.
    • Garnish with fresh parsley and extra Parmesan cheese if desired. Serve warm.
