1 tablespoon olive oil
1 pound Italian sausage
1 small onion, diced
3 cloves garlic, minced
4 cups chicken broth
3 cups russet potatoes, peeled and diced
1 teaspoon dried oregano
1/2 teaspoon crushed red pepper flakes (optional)
Salt and black pepper to taste
2 cups chopped kale
1 cup heavy cream
1/2 cup grated Parmesan cheese
Instructions
Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, breaking it into crumbles. Remove excess fat if needed.
Add diced onion and cook for 3-4 minutes until translucent. Stir in garlic and cook for another minute.
Pour in chicken broth, then add diced potatoes, oregano, red pepper flakes, salt, and pepper. Bring to a boil.
Reduce heat and simmer for 10-15 minutes, or until potatoes are fork-tender.
Stir in chopped kale and simmer for another 5 minutes until wilted.
Lower heat and stir in heavy cream and Parmesan cheese until melted and fully combined.
Simmer for 2-3 more minutes. Adjust seasoning as needed and serve hot.
Notes
Substitute half-and-half for a lighter version.
Use turkey sausage for a leaner option.
