Ingredients

Scale

For the Casserole:

  • 2 cups cooked, shredded chicken (rotisserie works great!)
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup sour cream (or Greek yogurt)
  • 1 packet (1 oz) ranch seasoning mix
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • 2 cups shredded cheddar cheese (divided)
  • 1 (32 oz) bag frozen tater tots
  • ½ cup cooked, crumbled bacon (optional)
  • 2 tablespoons chopped green onions (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

  2. Mix the creamy ranch chicken:

    • In a large bowl, stir together cream of chicken soup, sour cream, ranch seasoning, garlic powder, onion powder, and black pepper.
    • Fold in the shredded chicken and 1 cup of cheddar cheese.
  3. Assemble the casserole:

    • Spread the creamy chicken mixture evenly into the greased baking dish.
    • Arrange frozen tater tots in a single layer on top.
  4. Bake:

    • Bake uncovered for 35-40 minutes, until the tater tots are crispy.
  5. Add the final cheesy touch:

    • Sprinkle the remaining 1 cup of cheddar cheese and crumbled bacon (if using) over the top.
    • Bake for another 5-10 minutes, until the cheese is melted and bubbly.
  6. Garnish & serve:

    • Sprinkle with chopped green onions.
    • Serve warm and enjoy!

Notes

  • Make it Spicy: Add diced jalapeños or a dash of hot sauce.
  • Healthier Option: Use low-fat sour cream and cheese, and swap tater tots for diced sweet potatoes.
  • Slow Cooker Option: Mix everything (except tater tots) and cook on low for 4-5 hours, adding tater tots in the last hour.
  • Make Ahead: Assemble and refrigerate up to 24 hours ahead, then bake when ready.
