A rich and comforting creamy sausage soup made with savory Italian sausage, tender vegetables, and a velvety broth – perfect for a cozy dinner.

Ingredients

  • 1 lb Italian sausage (mild or spicy), casings removed
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups chopped spinach or kale
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add sausage and cook until browned, breaking it up with a spoon. Remove excess grease if necessary.
  2. Add onion, garlic, carrots, and celery to the pot. Sauté for 5–7 minutes until vegetables are softened.
  3. Stir in thyme, oregano, salt, and pepper.
  4. Pour in chicken broth and bring to a simmer. Cook for 10–15 minutes until vegetables are tender.
  5. Reduce heat and stir in heavy cream and chopped spinach or kale. Simmer for 5 more minutes until greens are wilted and soup is heated through.
  6. Top with Parmesan cheese if using. Serve hot.

  • Use turkey or chicken sausage for a lighter version.
  • Substitute cream with half-and-half for a lighter texture.
