Ingredients

Scale
  • 8 oz fettuccine or pasta of choice
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 2 tbsp unsalted butter
  • 1 tbsp chopped fresh parsley (optional)

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet over medium heat, heat olive oil. Add shrimp, season with salt and pepper, and cook for 2–3 minutes per side or until pink and opaque. Remove and set aside.
  3. In the same skillet, add butter and minced garlic. Sauté for 1 minute until fragrant. Add red pepper flakes if using.
  4. Pour in chicken broth and bring to a simmer. Cook for 2–3 minutes to reduce slightly.
  5. Stir in heavy cream and bring to a gentle simmer. Add Parmesan cheese and stir until melted and sauce is smooth.
  6. Return cooked shrimp to the skillet and simmer for 2 minutes to heat through.
  7. Add cooked pasta and toss to coat in the sauce. Adjust seasoning as needed.
  8. Serve warm, garnished with chopped parsley if desired.

Notes

  • Use half-and-half for a lighter version of the sauce.
  • Add spinach or sun-dried tomatoes for extra flavor and color.
  • Freshly grated Parmesan melts better and provides superior flavor.
