Creamy sun-dried tomato chicken orzo is a rich and comforting one-pan meal that’s full of flavor. Tender chicken is cooked in a creamy, garlicky sauce with sun-dried tomatoes and orzo pasta, all in one skillet. It’s a simple yet elegant dinner that’s perfect for any night of the week.

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

  • Salt and pepper, to taste

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • 1/2 cup sun-dried tomatoes (in oil), drained and chopped

  • 1 cup orzo pasta

  • 2 cups chicken broth

  • 1/2 cup heavy cream

  • 1/4 cup grated Parmesan cheese

  • 1 teaspoon Italian seasoning

  • 2 cups baby spinach (optional)

  • Fresh basil or parsley, for garnish (optional)

Instructions

  1. Season chicken with salt and pepper.

  2. Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through, about 5–6 minutes. Remove and set aside.

  3. In the same skillet, add garlic and sun-dried tomatoes. Cook for 1 minute until fragrant.

  4. Stir in the orzo and toast for 1–2 minutes, stirring often.

  5. Pour in chicken broth and Italian seasoning. Bring to a simmer and cook for about 8–10 minutes, stirring occasionally, until orzo is tender and most of the liquid is absorbed.

  6. Stir in heavy cream, Parmesan cheese, and cooked chicken. Simmer for 2–3 more minutes until creamy and heated through.

  7. Add spinach if using, and stir until wilted.

  8. Garnish with fresh basil or parsley and serve warm.

Notes

  • You can use rotisserie chicken to speed things up.

  • For extra creaminess, add a splash more cream or an extra tablespoon of Parmesan.

  • Great served with crusty bread or a green salad.
