This Creamy Tuscan Gnocchi is a rich and comforting dish made with soft gnocchi, a creamy garlic-Parmesan sauce, and a medley of spinach, sun-dried tomatoes, and Italian herbs. Ready in under 30 minutes, it’s perfect for a cozy dinner or a quick yet elegant meal!

  • 1 lb (450 g) gnocchi (store-bought or homemade)
  • 2 tablespoons olive oil or butter
  • 3 garlic cloves, minced
  • 1/2 cup (60 g) sun-dried tomatoes, chopped
  • 1 1/2 cups (360 ml) heavy cream
  • 1/2 cup (50 g) grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional, for a touch of spice)
  • 2 cups (60 g) fresh spinach
  • Salt and black pepper, to taste
  • Fresh basil (optional, for garnish)

Instructions

1. Cook the gnocchi

  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions (usually until they float to the surface).
  2. Drain and set aside.

2. Sauté the garlic and sun-dried tomatoes

  1. In a large skillet, heat the olive oil or butter over medium heat.
  2. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Stir in the chopped sun-dried tomatoes and cook for another 1–2 minutes.

3. Make the creamy sauce

  1. Pour in the heavy cream and bring it to a gentle simmer.
  2. Stir in the Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Cook for 2–3 minutes, stirring, until the sauce thickens slightly.

4. Add spinach and gnocchi

  1. Stir in the fresh spinach and cook until wilted, about 1 minute.
  2. Add the cooked gnocchi to the skillet and toss to coat evenly in the sauce.

5. Season and serve

  1. Season with salt and black pepper to taste.
  2. Garnish with fresh basil and extra Parmesan cheese, if desired.
  3. Serve hot with crusty bread or a side salad for a complete meal.
