Creamy Tuscan Marry Me Butter Beans is a hearty and comforting dish made with tender butter beans simmered in a rich, garlicky, sun-dried tomato cream sauce with Italian herbs. Perfect as a main or a side dish, it’s a plant-based twist on the viral ‘Marry Me’ recipe.

  • 2 cans (15 oz each) butter beans, drained and rinsed
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup sun-dried tomatoes (in oil), chopped
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1/2 cup vegetable broth
  • 3/4 cup heavy cream (or coconut cream for vegan)
  • 1/4 cup grated Parmesan (optional or plant-based)
  • 2 cups fresh baby spinach
  • Fresh basil or parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and sauté until translucent, about 4-5 minutes.
  3. Stir in garlic and red pepper flakes, and cook for another 1-2 minutes.
  4. Add sun-dried tomatoes, oregano, thyme, salt, and pepper. Stir well.
  5. Pour in the vegetable broth and bring to a simmer.
  6. Add the butter beans and cook for 5 minutes to absorb flavors.
  7. Stir in the cream and Parmesan, simmer for another 3-4 minutes until sauce thickens slightly.
  8. Add spinach and cook until wilted.
  9. Garnish with fresh basil or parsley and serve warm.

Notes

  • Use canned or cooked dried butter beans for convenience.
  • To make it vegan, use coconut cream and vegan Parmesan or omit cheese.
  • Delicious with crusty bread, pasta, or rice.
