  • 1/3 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional, for spice)
  • Salt and black pepper, to taste
  • Fresh basil or parsley, chopped (for garnish)


Instructions

  1. Prepare the Chicken:
    • Pat the chicken breasts dry with a paper towel. Season with salt and black pepper, then dredge lightly in flour, shaking off excess.
  2. Sear the Chicken:
    • Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 4–5 minutes per side, or until golden brown and nearly cooked through. Remove the chicken from the skillet and set aside.
  3. Make the Sauce:
    • In the same skillet, melt the butter over medium heat. Add the garlic and sauté for 1 minute until fragrant.
    • Stir in the chicken broth, heavy cream, and Parmesan cheese. Whisk until smooth and bring to a gentle simmer.
    • Add the sun-dried tomatoes, Italian seasoning, and red pepper flakes (if using). Simmer for 2–3 minutes to allow the flavors to meld.
  4. Add Spinach and Chicken:
    • Stir the spinach into the sauce until wilted. Return the chicken to the skillet, spooning the sauce over the top. Simmer for an additional 5 minutes, or until the chicken is cooked through (internal temperature of 165°F).
  5. Serve:
    • Serve hot, garnished with fresh basil or parsley. Pair with pasta, rice, or a side of crusty bread to soak up the sauce.
