Crispy Baked Spicy Chicken Bites are tender chunks of chicken coated in a seasoned, crunchy crust and baked to golden perfection, delivering bold heat and flavor without the need for frying.

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 tsp hot sauce (optional)
  • 1 cup panko breadcrumbs
  • 1/2 cup plain breadcrumbs
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cayenne pepper
  • Salt and black pepper, to taste
  • Cooking spray or olive oil spray

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease with cooking spray.
  2. In a bowl, mix buttermilk and hot sauce. Add chicken pieces, toss to coat, and let marinate for at least 15 minutes.
  3. In another bowl, combine panko, plain breadcrumbs, paprika, garlic powder, onion powder, cayenne, salt, and pepper.
  4. Remove chicken from marinade, allowing excess to drip off, and coat in breadcrumb mixture, pressing to adhere.
  5. Place chicken pieces on prepared baking sheet in a single layer. Spray tops lightly with cooking spray.
  6. Bake for 20–25 minutes, flipping halfway through, until chicken is golden and crispy, and internal temperature reaches 165°F (74°C).
  7. Serve hot with your favorite dipping sauce.

Notes

  • For extra crispiness, place a wire rack on the baking sheet and bake the chicken on top.
  • Adjust the cayenne to control the spice level.
  • Pairs well with ranch, honey mustard, or spicy mayo dips.
