  • 1 cup cold sparkling water (or beer for beer-batter version)
  • Vegetable oil, for frying

Instructions

  1. In a large bowl, whisk together flour, cornstarch, baking powder, salt, and pepper.
  2. Gradually whisk in cold sparkling water until a smooth batter forms.
  3. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  4. Pat cod fillets and onion rings dry with paper towels.
  5. Dip cod pieces into the batter, allowing excess to drip off, then carefully place into hot oil.
  6. Fry cod for 4-5 minutes or until golden brown and crispy. Remove and drain on paper towels.
