These Crispy Black Bean Tacos are a simple, budget-friendly, and delicious meal. Packed with seasoned black beans, melted cheese, and fried to crispy perfection, they make a perfect vegetarian dinner or snack. Serve with your favorite toppings and dips for added flavor!

  • 2 tbsp olive oil (plus more for frying)
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 tsp ground cumin
  • ½ tsp chili powder
  • ½ tsp smoked paprika (optional)
  • ½ tsp salt (or to taste)
  • ¼ cup water or vegetable broth
  • 8 small corn or flour tortillas
  • 1 cup shredded cheddar or Monterey Jack cheese

  • Salsa
  • Sour cream
  • Guacamole
  • Chopped cilantro
  • Lime wedges


Instructions

  1. Prepare the Black Bean Filling:
    Heat 2 tbsp olive oil in a skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Add the garlic and sauté for 1 minute.
  2. Season the Beans:
    Stir in the black beans, cumin, chili powder, smoked paprika, and salt. Add the water or vegetable broth and mash some of the beans with the back of a spoon to create a chunky paste. Cook for 2-3 minutes until the mixture is thickened. Remove from heat.
  3. Assemble the Tacos:
    Lay out the tortillas and spread 2-3 tbsp of the black bean mixture on half of each tortilla. Sprinkle with a generous amount of shredded cheese and fold the tortilla in half to create a taco shape.
  4. Fry the Tacos:
    Heat a large skillet over medium heat with enough olive oil to coat the bottom. Place the tacos in the skillet and cook for 2-3 minutes per side, or until golden and crispy. Work in batches if necessary, adding more oil as needed.
  5. Serve:
    Serve the crispy tacos hot with your favorite toppings and dips, such as salsa, guacamole, sour cream, and lime wedges.

Notes

  • For extra spice, add diced jalapeños or a pinch of cayenne pepper to the black bean mixture.
  • Use a non-stick skillet for easier frying and less risk of sticking.
