Crispy Creamy Chicken Cordon Bleu is a classic dish made with tender chicken breasts stuffed with ham and Swiss cheese, breaded and baked or fried to golden perfection, then topped with a rich, creamy Dijon sauce.

  • 4 boneless, skinless chicken breasts
  • 4 slices deli ham
  • 4 slices Swiss cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (Panko or regular)
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil or melted butter (for baking)
  • For Creamy Dijon Sauce:
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • 1 tbsp Dijon mustard
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish or line with parchment.
  2. Place each chicken breast between two sheets of plastic wrap and pound to 1/4-inch thickness.
  3. Layer 1 slice of ham and 1 slice of Swiss cheese on each breast. Roll tightly and secure with toothpicks.
  4. Set up a breading station: dredge each roll in flour, then dip in beaten eggs, and coat with a mix of breadcrumbs, garlic powder, paprika, salt, and pepper.
  5. Place in prepared dish, drizzle with olive oil or melted butter, and bake for 25–30 minutes until golden and internal temp reaches 165°F (74°C).
  6. Meanwhile, in a saucepan, melt butter over medium heat. Whisk in flour and cook 1 minute.
  7. Gradually whisk in milk and bring to a simmer until thickened. Stir in Dijon mustard and Parmesan. Season to taste.
  8. Remove chicken from oven, rest 5 minutes. Remove toothpicks, slice if desired, and drizzle with warm Dijon sauce before serving.

Notes

  • For extra crispiness, use Panko breadcrumbs and bake on a wire rack.
  • This dish can be prepped ahead and refrigerated before baking.
  • Pair with green beans, mashed potatoes, or a fresh salad for a complete meal.
