For the Fish:

  • 4 fillets of white fish (cod, haddock, or tilapia)
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup cornmeal (optional, for extra crunch)
  • Vegetable oil, for frying

For the Sandwich:

  • 4 brioche or burger buns, toasted
  • 1 cup shredded lettuce
  • 1 medium tomato, sliced
  • 1/4 cup sliced pickles

For the Tartar Sauce:

  • 1/2 cup mayonnaise
  • 2 tablespoons dill pickles, finely chopped
  • 1 tablespoon capers, finely chopped (optional)
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh dill or parsley, chopped
  • Salt and pepper, to taste

Instructions

1. Prepare the Tartar Sauce:

  • In a small bowl, mix mayonnaise, chopped pickles, capers, lemon juice, Dijon mustard, and fresh herbs.
  • Season with salt and pepper to taste.
  • Chill in the refrigerator until ready to use.

2. Set Up the Breading Station:

  • In one bowl, mix flour, garlic powder, paprika, salt, and pepper.
  • In a second bowl, beat the eggs.
  • In a third bowl, combine panko breadcrumbs and cornmeal.

3. Bread the Fish:

  • Pat the fish fillets dry with a paper towel.
  • Dredge each fillet in the flour mixture, then dip into the beaten eggs, and finally coat with the panko breadcrumb mixture.
  • Press gently to ensure the coating sticks well.

4. Fry the Fish:

  • Heat about 1 inch of vegetable oil in a skillet over medium-high heat to 180°C (350°F).
  • Fry the fish fillets for 3-4 minutes per side until golden brown and cooked through.
  • Transfer to a plate lined with paper towels to drain excess oil.

5. Assemble the Sandwiches:

  • Spread tartar sauce on the bottom half of each toasted bun.
  • Add a layer of shredded lettuce, a crispy fish fillet, tomato slices, and pickles.
  • Spread more tartar sauce on the top bun and place it on top of the sandwich.

6. Serve:

  • Serve immediately with extra tartar sauce or a squeeze of fresh lemon juice.


Notes

  • For a healthier option, bake the breaded fish at 200°C (400°F) for 12-15 minutes, turning halfway through.
  • You can add sliced red onions or a slice of cheese for extra flavor.
  • The fish can also be air-fried at 180°C (350°F) for 10-12 minutes.
