Crispy Griddle Wings are juicy chicken wings cooked on a hot flat-top griddle, achieving an irresistible golden-brown crisp without the need for deep frying.

  • 2 pounds chicken wings, separated into flats and drumettes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • Optional: buffalo sauce, BBQ sauce, or your favorite wing sauce for tossing

Instructions

  1. Preheat griddle to medium-high heat.
  2. Pat the chicken wings dry thoroughly with paper towels.
  3. In a large bowl, toss the wings with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
  4. Place wings on the hot griddle, spaced out to allow airflow around each piece.
  5. Cook, turning occasionally, for 20-25 minutes, or until wings are crispy, golden, and internal temperature reaches 165°F (74°C).
  6. Remove from griddle and toss in your favorite sauce or serve plain with dipping sauces.

Notes

  • Dry wings = crispier wings, so don’t skip patting them dry.
  • Press gently with a spatula while cooking to increase surface crispiness.
  • Use two griddle zones (hot and medium) for better control if possible.
  • Serve with celery sticks, ranch, or blue cheese dressing.
