Crispy Lemon Baked Fish is a light and flavorful dish featuring tender white fish fillets coated in a zesty lemon-parmesan breadcrumb crust, then baked to golden perfection. A healthy and easy weeknight dinner option.

  • 4 white fish fillets (such as cod, tilapia, or haddock)
  • 1/2 cup breadcrumbs (panko preferred)
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped
  • Zest of 1 lemon
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a shallow bowl, combine breadcrumbs, Parmesan cheese, parsley, lemon zest, garlic powder, salt, and pepper.
  3. In a small bowl, whisk together olive oil, Dijon mustard, and lemon juice.
  4. Pat fish fillets dry with paper towels. Brush each fillet with the lemon-mustard mixture.
  5. Press each fillet into the breadcrumb mixture, coating both sides well.
  6. Place coated fillets on the prepared baking sheet.
  7. Bake for 12–15 minutes, or until the fish flakes easily with a fork and the crust is golden and crispy.
  8. Serve with extra lemon wedges and a sprinkle of fresh parsley if desired.

Notes

  • Use fresh fish fillets for the best texture and flavor.
  • Panko breadcrumbs create an extra crispy crust, but regular breadcrumbs also work.
  • Can be served with rice, roasted vegetables, or a green salad.
  • Adjust lemon and mustard amounts to suit your taste preference.
