These Crispy Oven-Baked Chicken Thighs are juicy, flavorful, and perfectly crispy on the outside—all without deep frying! With a simple spice rub and baked to golden perfection, this easy, foolproof recipe is perfect for weeknight dinners, meal prep, or feeding a crowd.

  • 6 bone-in, skin-on chicken thighs (about 2.5 lbs total)
  • 2 tbsp olive oil (or melted butter for extra richness!)
  • 1 ½ tsp salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika (adds color & flavor!)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried oregano or thyme (optional, for extra flavor!)
  • ½ tsp cayenne pepper (optional, for a little heat!)

Instructions

Step 1: Preheat & Prep

  1. Preheat oven to 425°F (220°C).
  2. Line a baking sheet with foil and place a wire rack on top (for extra crispiness!).

Step 2: Season the Chicken

  1. Pat chicken thighs very dry with paper towels (removes excess moisture for a crispier skin!).
  2. In a small bowl, mix together salt, pepper, paprika, garlic powder, onion powder, oregano, and cayenne.
  3. Rub olive oil all over the chicken thighs, then coat evenly with the spice mixture.

Step 3: Bake the Chicken

  1. Place chicken thighs skin-side up on the wire rack.
  2. Bake for 35-40 minutes, or until the skin is crispy and the internal temperature reads 165°F (75°C).
  3. For extra crispiness, broil on high for 2-3 minutes at the end.

Step 4: Rest & Serve

  1. Let the chicken rest for 5 minutes before serving.
  2. Serve warm with roasted veggies, mashed potatoes, or a fresh salad!
