Crispy Potato Skins

Crispy Potato Skins are a crowd-pleasing appetizer made from baked potato halves scooped and filled with melted cheese, crispy bacon, and green onions, then baked until golden and crunchy.

Ingredients

  • 4 large russet potatoes
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 2 green onions, sliced
  • Sour cream, for serving (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes clean and pierce each with a fork a few times.
  2. Bake potatoes directly on oven rack for about 45–50 minutes, or until tender. Let cool slightly.
  3. Cut each potato in half lengthwise and scoop out the flesh, leaving about 1/4 inch of potato on the skin.
  4. Brush both sides of the potato skins with olive oil and season with salt and pepper.
  5. Place skins on a baking sheet, skin-side down, and bake for 10 minutes. Flip and bake another 5–10 minutes until crisp.
  6. Fill each skin with shredded cheese and crumbled bacon, then return to oven and bake for 5 more minutes until cheese is melted.
  7. Remove from oven, sprinkle with green onions, and serve warm with sour cream if desired.

Notes

  • Save the scooped-out potato for mashed potatoes or another recipe.
  • For a vegetarian version, skip the bacon or use meat-free crumbles.
  • Can be prepared ahead and reheated just before serving.
