These roasted chickpeas are perfectly crispy and seasoned to perfection. They make a delicious protein-packed snack or a crunchy topping for salads and bowls!

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika (smoked or regular)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional for spice)

Optional Seasoning Variations:

  • Ranch: Add ½ teaspoon dried dill & onion powder.
  • BBQ: Add ½ teaspoon smoked paprika & a pinch of brown sugar.
  • Lemon Pepper: Add ½ teaspoon lemon zest & black pepper.

 


Instructions

  1. Preheat & Prep:

    • Preheat oven to 400°F (200°C).
    • Drain and rinse chickpeas, then pat them completely dry with a paper towel (moisture prevents crispiness).
  2. Season the Chickpeas:

    • Spread chickpeas on a baking sheet and toss with olive oil, garlic powder, paprika, salt, and pepper.
  3. Roast:

    • Bake for 25-30 minutes, shaking the pan halfway through, until golden and crispy.
  4. Cool & Serve:

    • Let the chickpeas cool for 5 minutes (they crisp up more as they cool).
    • Enjoy as a snack or salad topper!

 


Notes

  • For Extra Crispiness: Roast at 375°F for 10 minutes, then increase to 400°F for another 15-20 minutes.
  • Storage: Store in an airtight container at room temp for up to 3 days (they soften over time).
  • Make It Sweet: Toss with cinnamon and honey for a dessert-style treat.
