Ingredients

Scale
  • 2 large sweet potatoes (about 1.5 lbs, peeled and cut into ½-inch cubes)
  • 2 tbsp olive oil (or melted butter for extra richness)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika (adds warmth and depth, optional)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp ground cumin (for an earthy kick, optional)
  • 1 tbsp cornstarch (for extra crispiness, optional but recommended)

For Serving:

  • Fresh parsley or cilantro (chopped, for garnish)
  • Drizzle of honey or maple syrup (optional, for a sweet-savory contrast)
  • Crumbled feta or goat cheese (optional, for a creamy touch)

Instructions

Step 1: Prep the Sweet Potatoes

  1. Preheat the oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper or lightly grease it with oil.
  3. In a large bowl, toss the sweet potato cubes with olive oil, salt, black pepper, smoked paprika, garlic powder, onion powder, and cumin.
  4. Sprinkle cornstarch over the potatoes and toss again until evenly coated—this helps them crisp up beautifully!

Step 2: Roast the Sweet Potatoes

  1. Spread the sweet potatoes in a single layer on the baking sheet, making sure they are not overcrowded (this ensures crispiness!).
  2. Roast for 25-30 minutes, flipping halfway through, until golden brown and crispy on the edges.

Step 3: Garnish & Serve

  1. Remove from the oven and let cool for 2-3 minutes.
  2. Sprinkle with fresh parsley or cilantro for color and freshness.
  3. Optional: Drizzle with honey or maple syrup for a sweet-savory touch, or top with crumbled feta or goat cheese for a creamy finish.
  4. Serve hot and enjoy!

Notes

  • Extra Crispy? Use a metal baking sheet and avoid overcrowding.
  • Want Some Heat? Add ½ tsp chili powder or cayenne pepper for a spicy kick!
  • Air Fryer Option: Roast at 400°F for 15-20 minutes, shaking the basket halfway through.
