2 medium zucchinis, thinly sliced
1 tbsp olive oil
1/4 cup grated Parmesan cheese
1/4 tsp garlic powder
1/4 tsp paprika
Salt and pepper to taste
Instructions
Preheat oven to 225°F (110°C) or preheat air fryer to 375°F (190°C).
Slice zucchini thinly using a mandoline or sharp knife and pat slices dry with paper towels.
In a bowl, toss zucchini slices with olive oil, Parmesan, garlic powder, paprika, salt, and pepper.
For oven: place slices in a single layer on a baking sheet lined with parchment paper. Bake for 1.5 to 2 hours, flipping halfway, until crisp.
For air fryer: place slices in a single layer in the basket and cook for 10-12 minutes, shaking halfway, until golden and crispy.
Let cool slightly before serving. Chips will crisp up more as they cool.
Notes
Slice zucchini as thinly as possible for best crispiness.
Store leftovers in an airtight container for up to 2 days.
