Crispy zucchini garlic bites are savory, cheesy nuggets made with shredded zucchini, garlic, herbs, and breadcrumbs, baked or air-fried to golden perfection for a tasty snack or appetizer.

Ingredients

  • 2 cups shredded zucchini
  • 1/2 tsp salt
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 2 tbsp chopped fresh parsley (optional)
  • Cooking spray or oil, for baking or air frying

Instructions

  1. Place shredded zucchini in a colander, sprinkle with salt, and let sit for 10 minutes. Then squeeze out as much moisture as possible using a clean towel or cheesecloth.
  2. Preheat oven to 400°F (200°C) or preheat air fryer to 375°F (190°C).
  3. In a bowl, combine zucchini, breadcrumbs, Parmesan, egg, garlic, pepper, oregano, basil, and parsley. Mix until well combined.
  4. Form the mixture into small bite-sized balls or patties and place them on a baking sheet lined with parchment or in an air fryer basket.
  5. Lightly spray with cooking spray. Bake for 18–20 minutes or air fry for 10–12 minutes, turning halfway, until golden and crispy.
  6. Serve warm with marinara or your favorite dipping sauce.

Notes

  • Be sure to remove as much water from the zucchini as possible for the crispiest texture.
  • These can be made ahead and reheated in the oven or air fryer.
  • Try adding shredded mozzarella for extra cheesiness.
