Crock Pot Cajun Chicken Pasta is a creamy, spicy, and flavorful dish made effortlessly in the slow cooker with tender chicken, bold Cajun spices, and pasta stirred in at the end.

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 4 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 8 oz penne or rotini pasta
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Rub Cajun seasoning evenly over the chicken breasts.
  2. Place chicken in the slow cooker along with bell peppers, onion, garlic, diced tomatoes, and chicken broth.
  3. Cover and cook on low for 5-6 hours or on high for 2.5-3 hours, until chicken is tender.
  4. Remove chicken, shred it, and return it to the slow cooker.
  5. Add cream cheese and heavy cream, stirring until melted and well combined.
  6. Cook pasta separately according to package instructions. Drain and stir into the slow cooker mixture.
  7. Mix in Parmesan cheese and cook for an additional 5-10 minutes to thicken slightly.
  8. Garnish with parsley before serving if desired.

Notes

  • Use store-bought or homemade Cajun seasoning depending on spice preference.
  • To lighten up, use half-and-half instead of heavy cream and low-fat cream cheese.
  • Add shrimp during the last 30 minutes of cooking for a seafood twist.
