  • For the main dish:
    • 1 1/2 lbs (680 g) beef sirloin or flank steak, sliced into thin strips
    • 1 large onion, sliced
    • 3 bell peppers (red, green, yellow), sliced
    • 3 cloves garlic, minced
    • 1/2 cup (120 ml) beef broth
    • 1/4 cup (60 ml) soy sauce (low-sodium preferred)
    • 1 tablespoon Worcestershire sauce
    • 1 tablespoon brown sugar
    • 1 teaspoon ground ginger
    • 1/2 teaspoon black pepper
  • For thickening (optional):
    • 1 tablespoon cornstarch
    • 2 tablespoons water
  • For serving:
    • Cooked white rice or noodles
    • Chopped green onions (optional)

Instructions

  1. Prepare the ingredients:
    • Slice the beef, onions, and bell peppers. Mince the garlic.
  2. Assemble in the crock pot:
    • Place the sliced beef, onions, and bell peppers in the crock pot. Add the minced garlic.
  3. Make the sauce:
    • In a small bowl, whisk together the beef broth, soy sauce, Worcestershire sauce, brown sugar, ground ginger, and black pepper. Pour the sauce over the ingredients in the crock pot.
  4. Cook:
    • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.
  5. Thicken the sauce (optional):
    • If you prefer a thicker sauce, mix the cornstarch and water in a small bowl to make a slurry. Stir it into the crock pot during the last 30 minutes of cooking.
  6. Serve:
    • Serve the pepper steak hot over cooked white rice or noodles. Garnish with chopped green onions, if desired.

Notes

  • For extra heat, add a pinch of red pepper flakes or sliced chili peppers to the sauce.
  • You can use frozen pepper strips if fresh bell peppers are unavailable.
