Sweet, savory, and sticky, Crockpot Bourbon Chicken is a slow-cooked dish inspired by the flavors of Bourbon Street. Made with tender chicken in a flavorful sauce featuring brown sugar, soy sauce, and bourbon (or apple juice for a non-alcoholic version), it’s perfect served over rice for an easy and satisfying meal.

  • For the Sauce:
    • 1/3 cup bourbon (or apple juice for non-alcoholic)
    • 1/2 cup low-sodium soy sauce
    • 1/2 cup brown sugar
    • 1/4 cup ketchup
    • 1/4 cup honey
    • 1/4 cup apple cider vinegar
    • 2 teaspoons minced garlic
    • 1 teaspoon ground ginger
    • 1/2 teaspoon red pepper flakes (optional, for heat)
  • For Thickening the Sauce:
    • 2 tablespoons cornstarch
    • 2 tablespoons water
  • For Serving:
    • Cooked white rice or fried rice
    • Sliced green onions (for garnish)
    • Sesame seeds (optional)


Instructions

  1. Prepare the Chicken and Sauce:
    • Place the chicken pieces in the crockpot.
    • In a bowl, whisk together the bourbon (or apple juice), soy sauce, brown sugar, ketchup, honey, apple cider vinegar, minced garlic, ground ginger, and red pepper flakes. Pour the sauce over the chicken.
  2. Cook:
    • Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is tender and cooked through.
  3. Thicken the Sauce:
    • In a small bowl, mix the cornstarch and water to make a slurry.
    • About 20 minutes before serving, stir the slurry into the crockpot to thicken the sauce. Turn the heat to high and let cook uncovered for 15-20 minutes until the sauce has thickened.
  4. Serve:
    • Serve the bourbon chicken over a bed of rice. Garnish with sliced green onions and sesame seeds, if desired.

Notes

  • You can add vegetables like bell peppers, onions, or broccoli in the last hour of cooking for a complete one-pot meal.
  • For extra caramelization, you can briefly sear the chicken in a skillet before adding it to the crockpot.
