Crockpot Cowboy Casserole is a hearty and comforting one-pot meal made with ground beef, beans, potatoes, and corn in a savory tomato-based sauce—perfect for busy weeknights or cold-weather dinners.

  • 1 pound ground beef
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 3 cups diced potatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (14.5 oz) diced tomatoes with juice
  • 1/2 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon chili powder (optional)

Instructions

  1. In a skillet over medium heat, cook ground beef with chopped onion and garlic until browned. Drain excess fat.
  2. In the crockpot, layer diced potatoes, cooked beef mixture, beans, corn, soup, and diced tomatoes.
  3. Season with salt, pepper, paprika, and chili powder if using. Stir to combine.
  4. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until potatoes are tender.
  5. Sprinkle shredded cheese over the top in the last 10–15 minutes of cooking. Cover until melted.
  6. Serve hot, optionally garnished with fresh parsley or green onions.

Notes

  • For a spicier version, add diced jalapeños or use hot chili beans.
  • Can be made ahead and refrigerated overnight before cooking.
  • Pairs well with cornbread or a side salad.
