Crockpot Crack Chicken and Rice is a creamy, cheesy, and comforting one-pot meal made with tender chicken, ranch seasoning, cream cheese, cheddar, and rice, all cooked effortlessly in a slow cooker.

  • 2 pounds boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix
  • 8 ounces cream cheese, cubed
  • 1 1/2 cups shredded cheddar cheese
  • 2 cups cooked rice
  • 1/2 cup cooked and crumbled bacon
  • 1/2 cup chicken broth
  • 2 green onions, sliced (for garnish)
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts in the bottom of a crockpot.
  2. Sprinkle ranch seasoning over the chicken and add the cubed cream cheese on top.
  3. Pour in chicken broth, cover, and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender and shreddable.
  4. Shred the chicken directly in the crockpot using two forks.
  5. Stir in shredded cheddar cheese, cooked rice, and crumbled bacon. Mix until combined and cheese is melted.
  6. Season with salt and pepper as needed.
  7. Garnish with sliced green onions before serving.
