Ingredients

Scale
  • 1 1/2 lbs fresh green beans, trimmed
  • 2 lbs baby potatoes (or red potatoes), quartered
  • 1 lb cooked ham, diced or cut into chunks
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 3 cups chicken broth (low sodium preferred)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika (optional)
  • Salt, to taste (optional)

Optional Garnishes:

  • Fresh parsley, chopped
  • Red pepper flakes

Instructions

1. Prepare the Ingredients:

  1. Wash and trim the green beans, cut the potatoes into bite-sized pieces, and dice the ham.

2. Assemble in the Crockpot:

  1. Add the green beans, potatoes, ham, onion, and garlic to the crockpot.
  2. Pour the chicken broth over the ingredients.
  3. Sprinkle in the garlic powder, onion powder, black pepper, and smoked paprika. Stir gently to combine.

3. Cook:

  1. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender and the flavors are well combined.

4. Taste and Adjust:

  1. Taste and add salt if needed (the ham and chicken broth may already provide enough saltiness).

5. Serve:

  • Garnish with chopped parsley or a sprinkle of red pepper flakes, if desired. Serve warm as a main course or hearty side dish.

Notes

  • Make It Smokier: Add a smoked ham hock or smoked sausage instead of diced ham for extra smoky flavor.
  • Add Heat: For a spicy kick, add diced jalapeños or a pinch of cayenne pepper.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or on the stovetop.
