Crockpot Marry Me Chicken is a rich and creamy dish with tender chicken thighs cooked in a luscious parmesan and sun-dried tomato sauce.   • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped (oil-packed, drained)
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional, for a little heat)
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)

For Serving:

 

  • Fresh basil or parsley, chopped
  • Cooked pasta, rice, or mashed potatoes

Instructions

  1. Prepare the Chicken:
    Season chicken with salt, pepper, garlic powder, and Italian seasoning.

  2. Sear the Chicken (Optional):
    For extra flavor, heat olive oil in a skillet over medium heat and sear chicken for 2-3 minutes per side until golden. This step is optional but recommended.

  3. Add Ingredients to Crockpot:
    Transfer chicken to the slow cooker. Add chicken broth, heavy cream, Parmesan cheese, sun-dried tomatoes, garlic, red pepper flakes, and thyme. Stir to combine.

  4. Cook:
    Cover and cook on low for 4-5 hours or on high for 2-3 hours until the chicken is tender and cooked through (internal temperature should reach 165°F).

  5. Finish and Serve:
    Stir the sauce to ensure it is well combined. Garnish with fresh basil or parsley. Serve over pasta, rice, or mashed potatoes.

  • For a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons water and stir into the sauce 30 minutes before serving.
