This Crockpot Meatloaf Recipe makes a moist, flavorful, and hearty meatloaf with minimal effort. Perfectly seasoned and topped with a tangy glaze, it’s a comforting dinner the whole family will love.

  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • Cooking spray or parchment paper
  • For the glaze:
  • 1/3 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon mustard

Instructions

  1. Spray the inside of a slow cooker with cooking spray or line with parchment paper for easy cleanup.
  2. In a large bowl, combine ground beef, breadcrumbs, eggs, milk, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, thyme, and parsley. Mix until just combined—do not overmix.
  3. Shape the mixture into a loaf and place it in the slow cooker.
  4. In a small bowl, mix together glaze ingredients: ketchup, brown sugar, and mustard. Spread half over the meatloaf.
  5. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until internal temperature reaches 160°F (71°C).
  6. Spread remaining glaze on top during the last 30 minutes of cooking.
  7. Let the meatloaf rest for 10 minutes before slicing. Serve warm.

Notes

  • You can substitute half of the ground beef with ground pork or turkey for variation.
  • Use oats instead of breadcrumbs for a gluten-free version.
  • Leftovers make great sandwiches the next day.
  • Form the loaf on foil for easy lifting and cleaner removal from the crockpot.
