Ingredients

  • 1.5 lbs chicken breasts or thighs
  • 1.5 lbs baby potatoes (halved, or quartered if large)
  • 2 cups baby carrots (optional)
  • 1 packet ranch seasoning mix (1 oz)
  • 1/2 cup chicken broth
  • 1/2 cup sour cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter (cut into small pieces)
  • Salt and pepper (to taste)

Optional Garnishes:

  • Fresh parsley (chopped)
  • Crumbled bacon

Instructions

  • Prepare the Crockpot:
    • Spray the inside of the crockpot with nonstick cooking spray or lightly grease with oil.
  • Layer the ingredients:
    • Place the baby potatoes and carrots (if using) at the bottom of the crockpot. Season lightly with salt and pepper.
    • Lay the chicken breasts or thighs on top of the vegetables.
  • Add the seasoning and liquid:
    • Sprinkle the ranch seasoning mix evenly over the chicken and vegetables.
    • Pour the chicken broth over everything. Add the butter pieces on top.
  • Cook:
    • Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is cooked through (internal temperature of 165°F) and the potatoes are tender.
  • Make it creamy:
    • About 30 minutes before serving, stir the sour cream and Parmesan cheese into the crockpot. Gently mix to coat the chicken and potatoes in the creamy ranch sauce.
  • Serve:
    • Garnish with fresh parsley or crumbled bacon, if desired. Serve hot and enjoy!

  • Chicken options: Use bone-in chicken thighs or drumsticks for extra flavor. Adjust cooking time slightly as needed.
