Cucumber Caprese Salad is a fresh and simple twist on the classic Italian salad, combining juicy tomatoes, crisp cucumbers, creamy mozzarella, and fragrant basil, all drizzled with balsamic glaze.

Ingredients

  • 2 cups cherry tomatoes, halved
  • 1 large cucumber, sliced into half-moons
  • 8 oz fresh mozzarella balls (bocconcini), halved
  • 1/4 cup fresh basil leaves, chopped or torn
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic glaze
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine cherry tomatoes, cucumber, mozzarella, and basil.
  2. Drizzle with olive oil and toss gently to coat.
  3. Season with salt and pepper to taste.
  4. Just before serving, drizzle with balsamic glaze.
  5. Serve immediately or chill for 10–15 minutes before serving.

Notes

  • Use heirloom cherry tomatoes for more color and flavor variety.
  • If balsamic glaze is unavailable, reduce regular balsamic vinegar on the stovetop until thickened.
  • Best served fresh, but can be stored in the fridge for up to 1 day.
