Cucumber, Mint and Lime Refreshers

This light and zesty refresher is made with fresh cucumber, mint, and lime. It’s naturally hydrating, super refreshing, and easy to whip up in just a few minutes. Perfect for sipping on hot days or serving at summer parties!

Ingredients

  • 1 large cucumber, thinly sliced

  • 12 limes, juiced (plus a bit of zest, optional)

  • 2 tbsp fresh mint leaves

  • 8 cups cold water

  • Ice cubes

  • Optional: 1–2 tbsp honey or agave syrup (for a hint of sweetness)

  • Optional garnish: cucumber slices, lime wedges, extra mint sprigs


Instructions

  1. Build the base:
    Add sliced cucumber, lime juice, zest (if using), and mint leaves to a large pitcher.

  2. Muddle the flavor:
    Gently muddle everything with a spoon to help release the flavors.

  3. Add liquid & chill:
    Pour in the cold water. Stir to combine. Add sweetener, if using, and adjust to taste. Let it chill in the fridge for at least 30 minutes.

  4. Serve:
    Fill glasses with ice and pour the refresher over. Garnish with cucumber slices, lime wedges, or a mint sprig.

Notes

  • Make it fizzy: Swap half the water for sparkling water or club soda just before serving.

  • Party-ready: Easily doubles or triples for a crowd.

  • Smoothie option: Blend cucumber, lime juice, mint, ice, and a little honey for a frozen twist.
