Curried Thai Beef with Peanut Sauce is a rich and savory dish featuring tender strips of beef stir-fried with aromatic Thai curry spices and tossed in a creamy, nutty peanut sauce. Served over rice or noodles, it’s a comforting and exotic meal full of bold flavors.

  • 1 lb beef sirloin or flank steak, thinly sliced
  • 1 tbsp vegetable oil
  • 1 tbsp red Thai curry paste
  • 1 tsp ground ginger
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 1 red bell pepper, sliced
  • 1 cup snap peas or green beans
  • 1/2 cup canned coconut milk
  • 1/4 cup creamy peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp lime juice
  • Cooked rice or rice noodles, for serving
  • Chopped peanuts and fresh cilantro, for garnish

Instructions

  1. In a bowl, mix coconut milk, peanut butter, soy sauce, brown sugar, and lime juice until smooth. Set aside.
  2. Heat oil in a large skillet or wok over medium-high heat. Add sliced beef and cook until browned, about 3–4 minutes. Remove and set aside.
  3. In the same pan, add curry paste, ginger, and garlic powder. Cook for 1 minute until fragrant.
  4. Add bell pepper and snap peas. Stir-fry for 3–4 minutes until just tender.
  5. Return beef to the pan and pour in the peanut sauce mixture. Stir to coat and simmer for 2–3 minutes until heated through and slightly thickened.
  6. Serve over rice or noodles. Garnish with chopped peanuts and cilantro.
