  • 1/2 cup unsweetened cocoa powder (preferably dark cocoa)
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in dark chocolate chips.
  7. Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 9-11 minutes, until the edges are set but the centers are still soft.
  9. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

  • Do not overbake to maintain a fudgy center.
  • Chill the dough for 20-30 minutes if you prefer thicker cookies.
