8 oz high-quality dark chocolate (60-70% cacao), finely chopped
1/2 cup heavy cream
1 tsp vanilla extract
1/8 tsp salt
Cocoa powder, chopped nuts, or melted chocolate for coating (optional)
Instructions
Place chopped dark chocolate in a heatproof bowl.
In a small saucepan, heat heavy cream over medium heat until it just begins to simmer.
Pour hot cream over the chocolate and let sit for 2–3 minutes to melt.
Stir gently until the mixture is smooth and fully combined. Add vanilla extract and salt, stirring to incorporate.
Cover the bowl and refrigerate the ganache for 1–2 hours, or until firm enough to scoop.
Using a small cookie scoop or spoon, scoop portions of ganache and roll into balls with your hands.
Roll truffles in cocoa powder, chopped nuts, or dip in melted chocolate as desired.
Place truffles on a parchment-lined tray and refrigerate until firm, about 30 minutes.
