  • 1 lb lean ground beef
  • 4 oz mushrooms, sliced
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Pinch smoked paprika
  • 2 oz (½ cup) cream cheese, softened
  • ½ cup milk
  • 1 tsp cornstarch
  • 12 oz frozen tater tots
  • ¼ cup Parmesan cheese, shredded

Instructions

  1. Preheat oven to 400 °F.
  2. In a skillet, cook beef and mushrooms with salt, pepper, onion & garlic powders, Italian seasoning, and smoked paprika until beef is browned (5–7 min).
  3. Stir in cream cheese and milk until smooth.
  4. Mix cornstarch with 1 Tbsp cold water; stir into mixture until sauce thickens. Remove from heat.
  5. Spread beef mixture in an 8×8 or 9×9″ baking dish.
  6. Arrange frozen tater tots evenly on top.
  7. Bake 25 min until tots are crispy; sprinkle Parmesan and bake 1–2 min more until cheese melts.
  8. Let rest a few minutes, then serve.

Notes

  • Swap in ground turkey for a lighter option.
  • Add peas, corn, or spinach into the beef layer for extra veggies.
  • Leftovers keep up to 5 days refrigerated or freeze up to 3 months.
  • To speed topping crisp, use an Instant Pot with air‑fryer lid: air‑fry at 400 °F for 12 min then add Parmesan and air‑fry 1 min.
