Ingredients
Scale
1 lb lean ground beef
4 oz mushrooms, sliced
1 tsp kosher salt
1 tsp black pepper
1 tsp onion powder
1 tsp garlic powder
1 tsp Italian seasoning
Pinch smoked paprika
2 oz (½ cup) cream cheese, softened
½ cup milk
1 tsp cornstarch
12 oz frozen tater tots
¼ cup Parmesan cheese, shredded
Instructions
Preheat oven to 400 °F.
In a skillet, cook beef and mushrooms with salt, pepper, onion & garlic powders, Italian seasoning, and smoked paprika until beef is browned (5–7 min).
Stir in cream cheese and milk until smooth.
Mix cornstarch with 1 Tbsp cold water; stir into mixture until sauce thickens. Remove from heat.
Spread beef mixture in an 8×8 or 9×9″ baking dish.
Arrange frozen tater tots evenly on top.
Bake 25 min until tots are crispy; sprinkle Parmesan and bake 1–2 min more until cheese melts.
Let rest a few minutes, then serve.
Notes
Swap in ground turkey for a lighter option.
Add peas, corn, or spinach into the beef layer for extra veggies.
Leftovers keep up to 5 days refrigerated or freeze up to 3 months.
To speed topping crisp, use an Instant Pot with air‑fryer lid: air‑fry at 400 °F for 12 min then add Parmesan and air‑fry 1 min.
