  • 4 bone-in or boneless pork chops (about 1 inch thick)
  • 1/4 cup brown sugar (packed)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil or butter

Instructions

  • Preheat the oven (optional):
    • If finishing the pork chops in the oven, preheat it to 375°F (190°C).
  • Season the pork chops:
    • In a small bowl, mix the brown sugar, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper. Rub the mixture generously onto both sides of the pork chops.
  • Sear the chops:
    • Heat olive oil or butter in a large skillet over medium-high heat. Add the pork chops and sear for 3–4 minutes on each side, until they develop a golden-brown crust.
  • Cook through:
    • Reduce the heat to medium, cover the skillet, and cook for an additional 4–6 minutes, or until the internal temperature of the pork chops reaches 145°F (63°C).
    • Alternatively, transfer the skillet to the preheated oven and bake for 5–7 minutes to finish cooking.
  • Rest and serve:
    • Remove the pork chops from the skillet and let them rest for 5 minutes before serving to allow the juices to redistribute.
  • Optional glaze:
    • For extra flavor, deglaze the skillet with 1/4 cup chicken broth or apple juice, scraping up the browned bits. Simmer for 2 minutes, then drizzle the sauce over the chops.
