This Doritos Taco Casserole is a fun and flavorful twist on classic taco night! Layers of seasoned ground beef, creamy cheese, and crunchy Doritos make this an easy, crowd-pleasing meal that’s perfect for potlucks or a cozy weeknight dinner.

  • 1 lb (450g) ground beef (or ground turkey)
  • 1 packet taco seasoning mix (or 3 tablespoons homemade taco seasoning)
  • ¾ cup water
  • 1 can (10 oz) Rotel diced tomatoes with green chilies (drained)
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese (or Mexican cheese blend)
  • 1 bag (9.75 oz) Nacho Cheese Doritos, slightly crushed
  • ½ cup chopped green onions (optional, for garnish)
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Preheat Oven:
    Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.

  2. Cook the Beef:

    • In a large skillet over medium heat, cook the ground beef until browned and fully cooked. Drain any excess grease.
    • Add taco seasoning and water to the skillet. Stir and simmer for 3-5 minutes until the sauce thickens.
    • Mix in the drained Rotel tomatoes and let cook for another 2 minutes.
  3. Assemble the Casserole:

    • Spread a layer of crushed Doritos on the bottom of the baking dish.
    • Add the taco meat mixture over the Doritos.
    • Spread the sour cream evenly over the meat layer.
    • Sprinkle shredded cheese evenly on top.
    • Finish with a final layer of crushed Doritos.
  4. Bake:

    • Cover with aluminum foil and bake for 20 minutes.
    • Remove the foil and bake for another 5-10 minutes, or until the cheese is melted and bubbly.
  5. Garnish and Serve:

    • Let cool for 5 minutes before serving.
    • Garnish with green onions and fresh cilantro, if desired.

  • For extra heat, use spicy Doritos or add jalapeños to the meat mixture.
  • Swap the ground beef for black beans or lentils for a vegetarian version.
